Why We Love It...
For Côté Cairn, owners of the two farms, Vincent and Cyrille, alongside winemaker Hembise, run the co-op with an aim to protect the environment and consumer health by steadfastly prescribing to organic farming and biodynamic winemaking methods. Their cooperative is named after the pile of stones, or a cairn, travelers leave along a mountain path to symbolize the collaborative spirit of their products and craftsmanship. They aim to make their carefully produced, organic wines just as accessible as non-organic ones price-wise – and hope to influence more companies and products to follow suit in allowing more people ease of access to organic wares.
Grown in the Drôme appellation of France, near the Italian border, the 100% Muscat grapes are undeniable as their aromas greet you with simultaneously tropical, spicy, and floral notes before your nose even reaches the glass – a conglomeration of white peach, lychee, jasmine, ginger, and dusty white pepper. On the palate, there’s a phenolic bitterness that is distinct and singular, with plenty of stone-fruit alongside undertones of hazelnut and Alpine herbs. It’s full of verve, excitement, and zest, and absolutely enchanting to sip on, with a fine mousse and a properly seductive aromatic nose. It would go exceptionally well with bold and spicy cuisines, like curries or spicy Southeast Asian fish dishes. We can’t get enough of this enticing sparkler and believe every bubbles-lover should have at least a few on hand!
