Why We Love It...
Michel is decidedly old-school, choosing to craft a product as it would have been made over 100 years ago, before the invention of many instruments and equipment used prevalently today in the wine industry. We love that Michel Chauvet has pushed the limits of quality in terms of what one man, with tireless effort and decades of experience, can achieve with a singular Champagne. This is all Grand Cru chardonnay, aged for eight years on the lees, and… in the unyielding Chauvet way – harvested, pressed, capped, riddled, and disgorged all by hand. (You should see his hands… they are an impressive sight)!
The wine just has everything you could want in a quintessential Blanc de Blancs – delicately toasted flavors of fresh-baked bread and grass-fed cow’s butter, with enticing aromas of alpine wildflowers, bright, lemon-y citrus notes, raw almond slivers, and zippy hints of green apples and gunflint. The nine g/liter dosage helps to round off any sharp edges (the prolonged time on the lees aids in that effort as well,) making for a creamy and dreamy finish that just goes on forever. Over 20% off is a true coup d'etat for a rare wine like this, and while we don’t have much, it is certainly something every Champagne lover should seek out – especially as we are down to under FIVE cases!
