Why We Love It...
Laetitia Billiot is the fourth generation to estate bottle Champagnes at this domaine in the Grand Cru Village of Ambonnay, while the house of H. Billiot extends back to 1960, with holdings that go back to the late 1800s in the Montagne de Reims. It was her great grandfather, Louis Billiot – a miller by trade who began investing in vines, right around the time that electricity came to Ambonnay. For years, the fruit would be sold off to larger houses, only keeping enough fruit to begin bottling their own production in the late 1930s. The parcel was divided up among the descendants in the 1950s and soon thereafter, Serge Billiot started bottling under the H. Billiot name.
Today, Laetitia manages 5 hectares, all in the rolling grasslands of Ambonnay’s Grand Cru village. Their holdings are almost exclusively on the mid slopes – much like the Grand Cru parcels in Burgundy, where there is the perfect balance of stress, water, and nutrients to grow high quality grapes. This cuvee is a blend of 75% pinot noir, and 25% chardonnay – all pressed in Champagne’s traditional vertical basket presses and vinified in stainless steel. Laetitia prevents the wines from undergoing malolactic fermentation, reasoning that “We have 100-percent grand cru vines, which always give a high degree of maturity, so we don’t need the malo.”
There certainly is no lack of complexity in this cuvee – with plenty of richness and mouthfeel as well. Aromas and flavors of ripe summer strawberries and shortbread biscuits dominate initially, with accents of orange blossom, lime zest, white cherries and fresh garden herbs like thyme and marjoram developing as the mousse settles. This is a delectable wine at a fantastic price… but alas, only ten cases available!
