Why We Love It...

Tucked away between the two major cities of Champagne – Reims and Epernay – Chigny-les-Roses is an absolute must see. The village is nested right in the vineyards, standing against a cliff shelf, topped by the region’s dark green forest. A number of well-known producers have chosen this quaint village as their base, including Jay Z’s Armand de Brignac (aka Ace of Spades) and the Lasalle family. This beauty – a 100% chardonnay from some of the best Premier and Grand Cru vineyards of the Côte des Blancs (including Chouilly, Avize, Cramant, and Cuis) is a spectacular example of the grape from some of the most revered chardonnay plots in Champagne.

Maison Gardet has been making Champagne since the late 1800s – relying on a combination of tradition, modern techniques, and meticulous sourcing to create their portfolio of thirteen spectacular cuvees that spread across all conceivable styles of Champagne. This cuvee, selected from their rare “Prestige" series, utilizes the solera method, in which 25% of the final blend is secured from past vintages that have been blended and melded together to create a reserve wine of exceptional complexity. An additional 25% of the wine from the current vintage is set aside and added to the solera for future bottlings. The aromas of the resulting champagne are as complex as you would expect – toasted Marcona almonds, with ripe peach, golden apricots, mandarin orange, and kaffir lime. The palate continues in a similar vein, though adding elements of struck flint, vanilla, toasty brioche, and even Orange Bang! 

The cuvee is fermented in stainless steel, with no malolactic secondary fermentation before aging on the lees (in bottle) for up to four years prior to disgorgement. A dosage of 6 grams/liter is made with the reserve wine and a natural beet sugar. The wine is lean, zippy, and a perfect accompaniment to bright and light fish fare. Sushi? Ceviche? About the Producer

Since 1820, Ameztoi has been the most respected producer in the region of Getariako Txakolina. They produce both traditional wines in large barrels and they were the inventor of rosé txakolina and one of the first to do méthode traditionnelle sparkling wines in the region. They own 20 hectares of vineyards planted high on the seaside cliffs of the village of Getaria. Ignacio Ameztoi is fifth generation and has played an important role in the development and innovation in Getariako Txakolina over the last 10 years.
