Why We Love It...
The house of Francois Lecompte is known for making completely natural Champagnes, without yeast inoculation. Only indigenous yeasts are used. They embrace slow aging and typically sit on the lees for at least six years in Champagne’s deep, dark chalk cellars, depending on the cuvee. The wines are sophisticated and nuanced, primed and ready for anything.
For the rose, the cuvee is matured for several years before release – with a full three years on the lees before disgorgement and a dosage of six grams per liter. This is also when the reserve still wine is added to provide the fresh and shining coppery pink color. Aging all occurs in the hand-carved chalk cellars dug out by François' grandfather, and the family spirits keep watch over the wines for an average of six plus years before release.
This layered blend’s cepage is 40% chardonnay, 30% pinot noir, and 30% meunier – with the brilliant rosy hue delivered by a red still wine they also make from their own vineyards. The wine is the perfect balance between heady, aromatic richness and tingly vivacity. Abundant fruit notes of raspberry and peach, with grapefruits and strawberries – all accented by a crumbled chalk stoniness are what you get here. The flavors expand across the mouth with a creamy, spicy lusciousness, and an onrush of salty minerality extends the fruity finish into something far more savory.
