The palate, however, has a beautifully serene and citric note of honey. The slender body is full of flavor, radiating freshness and honey-salted depth accentuated by really fine, creamy mousse. Lots of depth, lots of joy, and such immense, alluring and mouth-watering saltiness result in pure elegance. That sense of clean, salty, chalky depth lasts and lasts, ringing with umami.
