Champagne Collery is a historic Champagne house founded in 1893, based in the prestigious village of Aÿ in the heart of the region’s best Pinot Noir terroir. It was one of the first houses in Champagne to bottle Champagne rather than simply sell its own grapes, and eventually won a gold medal in Paris in 1904, further adding to its prestige. Over more than a century, it has built a reputation for producing Grand Cru Champagnes that emphasize terroir, precision blending, and patient aging. With a cellar-master-driven philosophy likened to goldsmithery, Collery exudes elegance and finesse in every cuvee.
The Extra Brut Grand Cru NV is drawn from a selection of their top Grand Cru sources, composed of 80% Pinot Noir and 20% Chardonnay grapes. Through the vinification process, both alcoholic and malolactic fermentations are carried out to completion in temperature-controlled stainless steel vats. To add complexity and depth, about 20% of the blend is aged in large old oak casks, while the Chardonnay aged in Sauternes barrels. After disgorgement, the wine spends four years aging on the lees to allow the blend to integrate fully.
It pours a lovely, deep golden yellow with amber reflections, adorned by a steady cord of tiny, energetic bubbles. On the nose, its freshness is evident with bright aromas of Golden Delicious apple and salt-crusted seashell, with more of the same on the palate, alongside caramelized hazelnut, camphor, nori crackers, and white strawberry. It’s broad and fruit-driven, with strong mineral undertones and a long, tonic finish that carries both brightness and subtle tension.
