Why We Love It...
Started in 1946 with a group of about 20 growers, Champagne Chavost is a cooperative winery in Chavot-Courcourt that today includes holdings of more than 70 growers. Fabian Daviaux took over the winemaking in 2019 at the ripe age of 30, and has led the co-op through some impressive changes, including taking all 5.5 hectares of the group’s organic vineyard holdings and making a range of organic Champagnes without any additives or sulfites. Many of the growers involved are from an older generation that might consider this untraditional move somewhat bold – even controversial, or risky – so his persuasion is considered a massive feat when you account for the wild overall success of the wines!
Where the eastern edge of the Vallée de la Marne and the northern tip of the Côte de Blancs meet lies the charming village of Chavot-CourCourt (previously known as Chavost) in the Côteaux Sud d'Epernay. The unique terroir has patches within meters of one another of chalky limestone that swiftly change to clay-packed limestone, allowing for both Chardonnay and Pinot Meunier grapes to flourish. This Blanc d'Assemblage is a 50/50 blend of both grapes – and, along with the winery’s four other organic bottlings, is made without sulphur, acidification, dosage, or clarification, and goes through alcoholic and malolactic fermentation without commercial yeasts, enzymes, or any other additives. Essentially, only the first-pressed juice – otherwise known as the cuvée – is used to craft these wines.
With equal parts of both of the area’s thriving grapes, this Brut Nature wine is an idyllic representation of the land from which it hails. The leading aromas make a splashy entrance with cheery and refreshing notes of apple cider, honeysuckle flowers, and dried pineapple. The palate is super bright and juicy, with a divine and prominent acidity, bringing in notes of green apple, salty lemon zest, and lots of chalky minerality. It maintains such a fun texture that is silky, yet generates pointed, tingly bubbles that lure you into your next sip all too easily. We’re ecstatic to be able to bring this smaller but resoundingly worthy producer to you today, and have a feeling you’ll fall just as in love with the wine as we have! Just under 9,000 bottles produced – and certainly slinging a steeper price tag at the Michelin restaurants and cool wine bars it’s found at otherwise. For $50, this is an absolute banger of a deal for some seriously thought-provoking bubbles!
