With more than 200 years of innovation and quality, Champagne Billecart-Salmon has the remarkable privilege of working with some of the best fruit anywhere in Champagne. This is a family-run empire that has survived and thrived for seven generations, over two centuries, in the heart of Mareuil-sur-Aÿ. They own 100 hectares of their own grapes, and contract out with some of the greatest growers for another 300 hectares – all spread across 40 Grand Cru sites throughout the Champagne region. Their vintage cuvees get the choice picks of the top lots, and this supreme Rosé bottling is selected and crafted from the very best of the best terroirs of Champagne – 55% Chardonnay from Chouilly, Avize, Mesnil-sur-Oger, and Cramant and 45% Pinot Noir from Mareuil-sur-Aÿ, Aÿ, and Ambonnay, sourced from both Grand Cru and Premier Cru sites.

Named after one of the house’s founders, Elisabeth Salmon, this cuvee was first released in 1988 and only gets made in the most exceptional vintages. After cellar aging on the lees for an impressive 115 months, disgorgement takes place along with a light dosage of 3.8 grams per liter. The wine’s namesake, Elisabeth Salmon, married Nicolas François Billecart in 1818, and together created this now legendary house that very year, with Elisabeth’s brother, Louis Salmon, coming on as the estate’s impassioned oenologist. Her heart and desire for excellence can be experienced in the house’s every cuvee – perhaps especially this one. Grown in a vintage considered to be iconic, this is a prodigious wine in more ways than one.

This singular wine immediately draws you in – a delicate, salmon pink color greets the eye initially, with persistent bubbles. The nose is full of ripe red and black berries, with an undertone of luscious peonies and violets. On the palate, the wine is immediately structured and powerful, pulling the acid profile and fruit profile together seamlessly. This is effortlessly elegant, with a mineral thread that elevates the whole thing, as well as delightful notes of cherry hand pies, pomegranate seeds, baked apples with cinnamon and clove, pickled ginger, and fresh mint. It is youthful and layered, capable of aging for years to come, and at the end of it all… a spectacularly worthy example of the best of the best for Billecart-Salmon. About the Producer

The champagnes of Maison Billecart-Salmon are above all created thanks to the knowledge of the men who rigorously cultivate an estate of 100 hectares, obtaining grapes from an area totalling 300 hectares across 40 crus of the Champagne region. The majority of the grapes used for vinification come from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Pinot Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Valle de la Marne and the Cote des Blancs.
