Sure, they’re a big house in Champagne, but they got that way for a reason…200 years of innovation, and quality, and working with some of the best fruit anywhere in Champagne. This is a family-run empire that has survived and thrived for seven generations, over two centuries, in the heart of Mareuil-sur-Aÿ. They own 100 hectares of their own grapes, and contract out with some of the greatest growers for another 300 hectares – all spread across 40 Grand Cru sites throughout the Champagne region. Their vintage cuvees get the choice picks of the top lots, and this supreme Blanc de Blancs bottling is selected and crafted from the very best of the best in the Côtes des Blancs. A blend of 100% chardonnay, including 58% Cramant, and each 21% Chouilly and Le Mesnil-sur-Oger.

The wine is vinified entirely in stainless steel, though part of the chardonnay is allowed to go through malolactic fermentation to enhance both mouthfeel and complexity. After both fermentations are complete, the wine is bottled and aged on the lees for an impressive 144 months, before disgorgement and a dosage of a light 3.75 grams per liter.

This singular wine immediately draws you in – with rich notes of fresh cream, followed by ripe apples, clover honey, and baked pears. Over time, the layers of complexity reveal red flowers, golden plums, apricots, river rocks, and more. The sensations throughout are bright and zippy, but also voluptuous and bold, with tangerine and yuzu citrus notes on the finish. This is youthful and layered, capable of aging for years to come, and at the end of it all…a spectacularly worthy example of the best of the best for Billecart-Salmon. But we’ve never failed to sell out of any Billecart-Salmon offer in Last Bubbles history, and fully expect the six cases we scored of this rare creature to disappear in no time at all. About the Producer

The champagnes of Maison Billecart-Salmon are above all created thanks to the knowledge of the men who rigorously cultivate an estate of 100 hectares, obtaining grapes from an area totalling 300 hectares across 40 crus of the Champagne region. The majority of the grapes used for vinification come from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Pinot Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Valle de la Marne and the Cote des Blancs.
