Why We Love It...
Armel and José Baudry are brothers, running a 20-hectare vineyard in the southernmost reaches of Champagne and serving as the 11th generation of their family to do so. Their principle focus carries on a long-standing family philosophy: healthy grapes grown with a focus on high quality, through the use of ecologically sustainable methods. This approach helps to preserve the environment of their site, as well as the vineyard’s health, all the while allowing them to craft unique and exceptional Champagnes.
Their NV Brut Rosé is an excellent showman of their work – built of 70% pinot noir and 30% chardonnay to create an almost coral-esque pinky-orange hue with splendidly fine and energetic bubbles. The grapes are thoughtfully selected and gently pressed to maintain the strength of aromas; then, initial fermentation takes place in temp-controlled stainless steel prior to second fermentation occurring in the bottle. Undergoing cellaring for 2-3 years, after disgorgement, the wine receives a Brut-level 8 grams per liter dosage to maintain the freshness and bolster the mouthwatering flavor profile.
This rosé makes for a splendid partner to food of all types – from spicy to smoky to brunch to poultry-based cuisines. With prominent red fruit characters spanning ripe, summer strawberries, crushed raspberries, red cherry gelato, plum skin, and red currants, its voluptuous personality is tamed by a whisper of salty sea waves, cherry saltwater taffy, and a tingly backbone of spritely acidity.
