Jan Vidal is an agricultural family that has been producing Cava in the north east of Spain for over 50 years. Their vineyards fall along the coast in the Baix Penedés region, tucked roughly halfway between Barcelona and Tarragonia. These 50+ year old vines sit at the foot of east-facing slopes – taking advantage of early morning sunshine to jumpstart each day’s ripening, without being overly exposed to the often-brutal later afternoon heat of the warm Mediterranean climate.
Honor Cava Brut Nature is made with 50% xarel-lo, 30% macabeu and 20% parellada – the traditional and local varieties used almost exclusively in Cava production. These native grapes have perfectly adapted to the dry, warm, and windy conditions of Northeastern Spain – showcasing ripe fruit flavors while maintaining percolating acidity and freshness. This sensational wine pours a pale, straw yellow – flecked with green tones – and offers up a preponderance of orchard fruit characteristics. Slow-roasted quince and crisp golden apples abound across the palate, with toasty aromas and flavors of roasted almonds, and a tingly vivaciousness in the form of bright lemon and lime notes. There is a yeasty and creamy richness to the mouth that lends depth to the bone-dry and crisp sensations, but overall this is all about purity and freshness… and of course the exceptional price.
