Why We Love It...

Last Bubbles owes its very name to this salt-of-the-earth family in Verona, and our gratitude runs deep. It began a few years ago at the Magnabosco family's beautiful Monte Tondo estate, where Marta Magnabosco closed our tasting with a glass of Frizzante and a smile, saying, "We have sadly reached the last bubbles." We registered the domain before we'd even left the table, then roused our very sleepy, very confused attorney back in the States to trademark "Last Bubbles." A few months later, we were off. Today we return to exactly where it all began – with the Magnabosco family's irresistible (and irresistibly priced) La Pink Corvina.

La Pink is 100% Corvina, and that alone makes it a delightful oddity. Corvina is the noble red grape behind Verona's brooding Amarone and Valpolicella reds, so seeing it coaxed into a pale, gently sparkling rosato is a genuine rarity. Grown organically on the family's high-altitude Veneto vines, it trades all that red-wine weight for something bright, saline, and impossibly easy to love – and the scarcity only makes it more fun.

We've adored the Magnabosco family for about as long as we can remember, and we're not going anywhere. They're celebrated for some of the most undervalued Soave Classico in all of Italy, yet they keep turning out sparklers that make a mockery of any price-to-quality math. The rolling hills between Soave and Valpolicella are their home turf, and you'd be hard-pressed to find a warmer, funnier, or more generous family anywhere in the country – which, believe us, is saying something.

Now, for the fun part! On the very first sniff, this is uncannily like the brown-butter ube cookies I can never resist at my local farmers market – nutty, faintly toasty, rich, wholly its own – before pink grapefruit and a streak of wet chalk step in. The palate is where it truly wakes up – bright, tingly, and racing with acidity, layering lime, grapefruit, and lemon zest over crisp Honeycrisp apple, pink peppercorn, fresh garden herbs, and that mineral-laden chalkiness. The mousse is lively and full of energy, sweeping the palate clean between sips.

It's simply so alive and so endlessly fun! If you happen to pour it alongside any seafood or anything from the fryer (raw oysters, fried chicken, tempura, salt-and-pepper squid), it borders on transcendent. I can eagerly say this is one of the most joyful under-$20 bottles we've come across in quite a while, and yet more proof that the Magnabosco family can do no wrong.
