The longtime producers of Spain’s sparkling wines have big plans…huge! Often dismissed as a sort of poor-man’s-bubbles, or blending staples at bottomless mimosas brunch bars… Cava’s first families are looking to change all that. New wine laws, more rigorous aging, labeling, and quality demands – all resetting the expectations of what Cava should and can be… a top-notch sparkling wine on par with great Champagne. Expect to see these roll-out in detail over the next few years, but top houses like Goulart are way ahead of the curve, engaging many of these practices for years.

Today we have this absolutely delectable, organic, vintage Cava Brut Reserva from Roger Goulart. You OG Last Bubblers might remember this as our 2nd ever offer! We promised we’d try to get more and, well, we delivered! Only about SIX CASES though, so jump at it! Roger Goulart has been making stellar sparkling wine just outside of Barcelona since the 1880s, modeled after the top Champagne houses from the very beginning by the Canals family. Nearly 140 years ago, they dug a cellar 30 meters deep and over a kilometer long to ensure the right conditions for aging their product. They were among the very first producers in Spain to adopt a minimum 3 year aging period to produce more complex and nuanced sparkling wines…just like Champagne. Essentially, quality has always been their aim… the extreme value is merely a byproduct of doing things right for over a century.

This is a layered and deep bubbly that smells of brewer’s yeast, red delicious apples, and Marcona almonds. The wine is expressive, yet crisp, with more orchard fruits, a bright lemon note, and a dry, long, and mineral-rich finish. This is something to have in your fridge at all times… or better yet, a dedicated mini-fridge filled with nothing but this! (Preferably stashed conveniently next to your office work desk, like me)! This is a new house favorite here at Last Bubbles, but like we said, there isn’t much of this left! Grab a few bottles while you can! 92 points and only $15 for bubbly doesn’t come around often!

About the Producer

At the end of the 19th century, the Canals family, inspired by wineries in the Champagne region, built a facility dedicated to the production of natural sparkling wine according to the method champenoise. Roger Goulart was founded here as a project focused on producing top quality sparkling wines. This modern style winery was built with a set of underground cellars 30 meters deep and more than a kilometer long. These cellars hold the temperature and humidity needed to produce expressive sparkling wines.
