Composed of 80% Chardonnay and 20% Pinot Noir, it is made exclusively from first-pressing juices, with a majority sourced from \"coeur de cuvée\" – the very heart of the press – pulled from select vineyards entirely within Les Riceys. Following alcoholic and malolactic fermentation in stainless steel, the wine matures in cellar for a full 30 months on the lees, developing a richness and textural depth that belies its pale golden, gossamer appearance in the glass. There's a finesse to it that keeps drawing you back to the glass, which is either a great quality or a dangerous one, depending on how many bottles you have on hand.\u003c\/p\u003e\n\u003cp\u003eOn the nose, the Prestigieuse opens with delicate floral aromatics and bright lemon zest, before giving way on the palate to a fresh, vivid array of white peach, persimmon, honey-roasted almonds, and vanilla.
